Drank a dogfish head sahti tonight, was pretty good. VERY strong belgian yeast flavor IMO, not obnoxious, but was at the forefront of my palate. I usually do not like that very much, but it worked well with the brew. Was a tad on the sweet side, but I would definitly drink it again.

http://www.paherald.sk.ca/News/Local/2010-08-28/article-1706312/-Brewing-up-a-Prince-Albert-tradition/1

Brewing up a Prince Albert tradition

Dan Dobratz wants to bring the brewing tradition back to Prince Albert.
He said it used to be a manufacturing town, but as of late, things have changed. With a strong tradition of beer making in the city, it is the perfect fit for the owner of Rogues Tavern on Second.
As the timeline sits now, Prince Albert Brewing Company should be turning out beer for public consumption on Dec. 1 and Rogue's Tavern on Sixth will be serving up food and the new brew on Feb. 1.
He said not to think of the new location as a chain. It may have the same name and the same takeout menu, but the rest will be new.
"It's going to be a neighbourhood pub," he said.
The inside of the pub will have an 18th century British theme, and serve the food that fits the look. He referred to it as British comfort food, explaining the menu will feature items like chicken pot pie.
Dobratz did say he will include some favourites on the new menu, like his "famous chicken wings."
"People tell us we make the best wings," he said.
With all the work and the resources required, he plans to keep it all local. All the construction is done by local contractors, insurance comes from within the city and at least 90 per cent of his barley will be grown in Saskatchewan fields.
When asked if he made a point of being as local as possible when it came to the new location, his answer was one word - "Absolutely."
Dobratz said plans have been in the works for the microbrewery for about two years. When the location near the corner of Sixth Avenue and 15th St. E. opened up, he jumped on the opportunity.
He said the pub will seat about 250 people and visitors will be able to see the whole brewing process.
Another feature will be a drive-thru - something he has been interested in since they became legal in the province.
He suggested people would be able to call ahead with a pizza or lasagna order and ask to pick it up at the drive-thru with some beer - it would all be done in one stop without leaving the vehicle.
As far as the beer goes, he said it shold be very good. They plan to make it from start to finish in shop. They will have a 10-hectolitre system and are able to brew 1,000 litres per batch. It is a "full mash system" with no syrup added. It is something Dobratz said makes for a better beer. He said they will make ale, lager, pilsner and try out some seasonal beers.
Prince Albert Brewing Company should have walls in the next two weeks and a roof the week after.

Cliffs, Guy in town is starting a brew pub / micro-brewery. Don't have one local yet.

Had a stone 14th anniversary imperial IPA last night. Was very good, great aroma and texture, excellent malt backbone with VERY forward hops. It was a very english style IPA, all the hops used were used for bittering very well and lead to a nice dry flavor. Would drink again if I found another bottle.

Not being a smart ass........

Beers have a "texture"?

They can. Stouts can be quite thick in carbonation and body, and sometimes feel like they are chewy. A lot of saison style ales are creamy from the carbonation.

Not all beer is fizzy yellow stuff with almost no flavor.

Kef
Another way to describe it is the thickness of the drink, or the fluidity, as I would call it. Higher gravity beers with lots of residual sugars, and higher protein beers will have a thicker creamier consistency to them compared to lighter beers.

Not neccisarily the intensity of the flavor, but more so the stickiness of the beer.

Got some really rares today.

http://i4.photobucket.com/albums/y133/Smorganin/0015d2f1.jpg

Left is Bell's Oracle, only 60 cases of 12oz bottles for the whole state of Ohio. Beverage Source (my shop of choice) only got 1. They sold out earlier today, but Joel saved me 3 bottles.

Right is a beer that we aren't supposed to be able to get in Ohio, Dark Horse Double Crooked Tree. Double IPA, 13%. Need I say more? Got 2 bottles of it, and he got A BUNCH of it, so hopefully it's good, as he's got plenty.

3 bottles of Oracle + 2 bottles of Double Crooked Tree + 1 bottle of water for the old lady = 23 bucks.

I'll update with whether it was worthwhile later on.

Kef

Two DIPAS sounds like a great day :D

Make sure to enjoy them both as your first beers of the day, on seperate days haha.

w00tah
09-04-2010, 02:01 AM
Hoss, the Double Crooked Tree can't "legally" be sold in Ohio, at least in 4 pack form. It's 13.6% alcohol, and our ABV cap is 12%. What they did, to basically get around it, is not print ABV on the bottle, and are selling it as single bottles, versus packs.

3.99 a piece. The Oracle is phenomenal, and if I have one left when I send your growler, I think I just might do that, and I'll try to get another Double Crooked Tree as well. He had like 2 cases worth of single 12oz bottles of it.

Kef

IIRC our alcohol cap is around 13% for beer in NC.

Up until about 8 years ago it was significantly lower...

So hoss, going to the Columbus Microbrew Festival this weekend, with a nice surprise, Weasel Boy won the Bronze Medal at the Great American Beer Fest for their Anastasia Russian Imperial Stout. Columbus Brewing will also be there with their Summer Teeth, which I think won gold or silver.

10 breweries, lots of beers including rare stuff, and only 20 bucks for 20 tickets for tasting with each additional at .50, plus a tasting glass.

Going to be enjoying this one. By the way, he is sold out of the Black IPA, at least, until the Halloween party, which he is tapping a keg of a dry hopped version of it. If he allows growlers, I may get that for you, since I will have money at the end of the month.

Should be. Went down to the brewery the other day, and they tapped an extremely limited beer called HOB- Honey Orange Blonde. It is FANTASTIC, but there are no growlers allowed because of they only have 2 kegs worth.

Made me a little sad.

Kef

Wow, haven't updated this shit in a while.

Hoss, you MAY want to try Weasel Boy's Anastasia instead of their Black IPA. The Anastasia won a Bronze at the Great American Beer Fest in Colorado a few weeks back in the Russian Imperial Stout category. There were 50 entries in that category.

I've got a couple things to try tonight, mixed 12 pack from Flying Dog, Sierra Nevada Estate Ale (certified USDA Organic) and a create a 6 from Beverage Source, including 21st Amendment Brew Free or Die IPA, GLBC Burning River, Bell's Special Double Cream Stout, and some others.

Should be a fun night of metal and beer :)

Being without a job right now fucking blows though. No new beers lately. Just a lonely SN 30th Anniversary Black Barleywine aging in the fridge and 4 bottles of 2010 Bigfoot aging as well.

Which NB you drinking hoss? They do several sours.

Me currently, I am drinking on a Columbus IPA that I had left in the fridge. Such a good beer. I will probably throw a couple in with that growler I am supposed to send you hoss. Just popped open a bomber of New Belgium lips of faith Belgo IPA. It is good, a little meh compared to what I was expecting, but still pretty good, expecially for the price.

With the hops that they list, I was expecting some big things, good aroma, good flavor, but not the full amount of hops I was expecting. I will try it with some food and see if it improves at all.

Up next is an OB Gubna, which I already know is awesome.

And Liverpool aren't sponsored by Carlsburg now, they are sponsored by Standard Chartered. And Liverpool have their work cut out if they even want to finish top half of the table. Man United hasn't been beat yet and are only behind Chelsea on goal differential and will be playing them shortly. If Chelsea bomb that game as hard as they bombed the Community Shield, the title will be back in Red Devil hands this year.

Wow, so glad this thread got turned into a soccer rant. Lol.

Belgian yeasts are growing on me, but I still cant stand when they overpower all the other flavors of the beer, which most of them do IMO...

I still have a bomber of flying mouflan and two bottles of java head at my parents house :yum:

w00tah

The Mouflan is probably drinking pretty sweet about now. Got 3 bottles of 2010 Bigfoot in my fridge (released in January) and I have a 30th Anniversary Sierra Nevada Black Barleywine aging (going on 6 months now).

Belgian yeast really can overpower a beer if the rest of the ingredients don't stand up to it. The best Belgian style I have had, actual Belgian or otherwise is still La Fin Du Monde. The more I drink of Belgian style beer, the more I want more La Fin. So complex, yet smooth and deceptive. I polished a 750 off in about half an hour, at the end of the bottle is about when it hit me.

I still have the growler of Anastasia in the fridge, but I have trade plans for it.

I have a vertical of the SN30's aging ATM, except for the 4th release... Which just recntly hit my market. I need to go and grab two bottles of it... One for now, one for the vertical.

I kind of want to drink the mouflan, but kind of want to let it keep giong... I have had it for about 8 months now, so some of the harsher alphas should have settled a bit, but I think that it has plenty of shelf life left in it.

Wouldn't *technically* be a vertical, as they aren't different vintages of the same beer. The Grand Cru (4th beer in the 30th series) sounds interesting, oak aged Bigfoot, Celebration, and Pale Ale blended together. Should be good.

The Mouflan, I wouldn't be worried about the alphas settling, as they would be highly diminished after a couple months. I would be worried whether the alcohol has mellowed out.

That IPA last night was fantastic. Started off lemon and orange hop, then I got a whiff of a fresh apple juice and was like WTF? First taste was a nicely bitter citrus hop, and the malt reminded me of pretzels and it stayed right with the hops the whole way through it. Worst part? It was 7.7% and you couldn't tell. One of my top 3 IPA's easily. If they end up making a year round IPA out of that recipe, I will buy it by the caseload.

I tried lagunitas brown shugga last night, and was VERY suprised by it. Not sweet like I was expecting, that is a DAMN good brown ale.

I was expecting something thin, sweet, and possibly alcoholic, but it was none of those things. Very well hopped and a great body.

I tried the Lagunitas IPA the other night and was disappointed by it. The hops sucked in that one, combination of bitter pine and herbal hops that reminded me of green onion. Didn't like that part at all.

Bell's Batch 10,000 was amazing, if you can pick one of those up do so. 101 different fermentables, 60 varietals of hops. 9.2%, and drinks like it is 5%. Really nice, and betting it would get better with some age on it.

There is a certain strain of hop that taste exactly like an onion... Not sure which hop it is, but someone was telling me about it the other week. It is an odd creation, and I have had a few beers that have that hop in it, and I have yet to taste the onion in them... But I am willing to bet that now that I am aware of it, that will dominate the flavor haha.

The bells sounds good, a bit over the top with that many fermentables and hops, but I would be willing to try it.

Had an Amber Bock this weekend. Not sure if its a 'craft' beer, but it was the first dark beer I've tried. The first sip had a really sour after taste and I thought I wouldn't like it. A few more sips and I was in love. I don't know anything about beer so I don't know what body is and all that jazz, but it was super smooth. I'm not sure what term is supposed to be used, but it felt like I was actually drinking something besides water.

I really want to try the stout more than anything. I didn't get to try it, our local store sold out of it. They still have a few of the barleywine and a bunch of the Grand Cru.

I decided I was in adventurous mood, so I tried a few new beers.

1) Goose Island 312
2) Boulevard Unfiltered Wheat
3) Stone Brewing Company Levitation Ale
4) Flying Dog In Heat Wheat

Definitely a fan of wheat beers. The Levitation was bitter to me at first, but grew on me after a while.

The 30th Black Barleywine is good, even fresh. I think the dark malt will start to come out more as it gets age on it. Even with it fresh though, you only get little bits of the alcohol here and there. Doesn't drink like it is almost 11%.

Tommy, you are lucky to be able to get Boulevard's stuff, they make some crazy beers. If you think the Flying Dog Wheat was good, try getting your hands on Blanche De Chambly from Unibroue. It is amazing. So is the Don De Dieu from them.

Let me ask you a question about the Levitation, do you think it drinks like it is only 4.4%?

And hoss, if you can't find it, I can get one for you. 9.99 + tax here. The one I got is around 7 months old now.

And La Fin du Monde. Question for you though, when you pour do you try not to disturb the yeast or do you mix it up as so:

YouTube - Pouring Ritual

w00tah
12-31-2010, 03:51 AM
La Fin Du Monde is one of my top 5 beers ever. I pour the yeast, after I slowly pour into my glass, I swirl the dregs to get the yeast moving, and then pour into the glass. Yeast doesn't hurt anything, IMO. It's only when you get chunks of protein sediment that I kind of try not to disturb the bottom.

Top 5 are:

Bell's Hopslam
Unibroue La Fin Du Monde
Weasel Boy Oak Aged Cherry Brown Stoat Stout
Bell's Two Hearted Ale
Columbus Brewing Company IPA

Hate to say that I like IPA's so much, but I do. I used to hate them until I had Hopslam. The moment my beer life changed forever. I will say this though, it's fucking expensive for a 6 pack, 17.99 + tax, and they are putting out 5L mini kegs this year, hate to see what the price on them is going to be, but I want one :P

Due to the way it tasted to me at first, I felt as though it was a "stronger" beer, but that's probably because I'm not really accustomed to the taste. Would that one be considered more "hoppy"? I'm a newcomer to craft beers so I don't know any of the lingo.

I think the others I had were stronger, but had a taste that I liked a little better, so they went down easier. The flying dog is 4.7%.

That one is more everything. Levitation has a pretty intense taste compared to its alcohol content, and yes, it is pretty hoppy, but it also has lots of malt to it to balance it out. And the hops they use are the delicious american style hops.

It drinks like something that should be closer to 10% alcohol, but is not that highly concentrated. The stone colaberation with ballast point and Kelsey McNair is another conundrum like this, HUGE taste, but moderate alcohol content. Perfect for when you want a few great beers but still need to drive.

Tommy, Levitation is a bit hoppier for the style. American Amber Ales are a good style, Troegs Hopback/Nugget Nectar, Bells Amber Ale, Lagunitas Lucky XIII, among others, are good examples. My favorite is Bells Amber, fantastic starter beer. And yes, Levitation drinks a lot bigger than it is. Total mindfuck the first time you have it.

Depends on what's available. On the 5th, when I go to Jackie O's in Athens, I'll probably end up spending like... 75 bucks or so. Buying 2 bottles of the Vanilla Bean Rum Barrel Aged Dark Apparition, and a bottle of the Kopi Luwak Bourbon Barrel Aged Dark Apparition. Going to use the Kopi and one of the Vanilla as trade bait on Beer Advocate, and the other Vanilla is for my brother. Going to fill my growler there as well. Hoping that Brad will do fills off the guest taps, as he's going to have the Harviestoun Ola Dubh Special Reserve 18 on tap. Aged in Highland Park 15 casks :)

I usually only have 2-3 a night, and can get by spending about $20/week or less.

It all depends on what time of year it is and what is available though  . Summer/fall spending is probably higher than winter spending just because more is available.

Well, trying well known examples in a certain style is one way. If you like one, you may like others that are in the same style.

For example, Sierra Nevada Pale Ale is the classic American Pale Ale. But pretty much any brewery you find has a Pale Ale, since it's such an easy style to brew. Depending on water, hop varietals, yeast used, malts used, they can very quite a bit.

For me, I like trying new beers, regardless of style or whatever. If I like it, I'll end up trying others in the style.

Java Stout was almost undrinkable, had a black malt in it that tasted like it wasn't debittered, reminded me of the taste of something that has come in contact with charcoal ashes.

The Milk Stout was decent. A little one note towards deep roasted, almost coffee like malt. Otherwise good.

I look for styles that I know that I like, and I like to try new stuff. A lot of time I will look at reviews online on my phone while I am shopping, and I generally comare the gravity and the IBU rating to try and gauge the taste.

Kef

It was an extract brew with some specialty grain, so partial mash. It was actually this kit: http://www.midwestsupplies.com/hop-scare-ipa.html . The OG was sitting spot on the high side of what the recipe claimed, at 1.06, should ferment down to yield about a 6% abv. We did not use the yeast that came with the kit, my friends propogated a colony of wyeast 1272 for me to use. And as for hops, the kit came with magnum, amarillo, and cascade. We also adjusted the hop schedule slightly to increase the bitterness slightly by leaving the magnum in the boil slightly longer. It smelled freaking great when we were brewing it, and it was a lot of fun to do, it is definitely worthwhile to have some educated friends there to help you and give you tips (also to hang out with and drink beer all day!). I am going back to my friends house this afternoon to see the yeast flocculating and making me some alcohol :) .

I am already planning my second beer to make, thinking about a single hop ESB.

That kit looks to be pretty basic for an IPA. Low bittering though, wonder why they only did .5 oz of Magnum, that's not a lot of bittering for an IPA.

Kef

It is an extract kit, they are all pretty basic  . The bittering in comparison with the gravity is spot on, if not on the high side of the style "guidelines". Probably wont finish as an absolute hop killer, but definitely will have a strong hop presence and should represent the style. They include .75oz of the magnum hops, and they say to put half in for the full boil, and half in for 30 minutes of the boil, I put the full .75oz in for the full 60 minutes of the boil to get a little extra bittering in.

What is a smash beer?

w00tah
02-22-2011, 08:29 PM
It is an acronym, Single Malt And Single Hop. It is a good way to get yourself familiar with the taste and aromas of the malt and hop used. I plan on doing one eventually. Going to use Citra for the hop, undecided on the malt though.

Putting the Magnum in for the whole boil will get you a little bit more bitterness out of them.

If you want some ideas for new ones to brew, I got a few from Sam Calagione's book Extreme Brewing if you's like. One in here for an Imperial Pale Ale that looks pretty tasty :)

Kef

hoss

Ahh, single malt and single hop would definitely be a fun one to brew. I want to do a brew where I make the same wort, but hop small batches using single hop varietals for each different batch, so that the beer would be essentially the same, but you would get different hop profiles.

That would be a fun way to learn different hop profiles.

I plan on sticking with extracts for just a bit longer, just so I can get all of the processes down, and sit in on a few AG brews to learn a bit about them. I went and saw my beer earlier, so I could see it all swimming and bubbling, it smells pretty fucking awesome so far. Can't wait for it to finish.

w00tah
02-22-2011, 11:13 PM
Doing small batches can be done, but doing a SMASH Pale Ale is the easiest way. Just use pale 2 row for your malt, and then whatever varietals you want for the hops. I would start with the something like Amarillo or Cascade, and go from there. Another way to find out a single varietal's aroma or flavor is to commercial beers that stick to single hop varietals for bittering and flavor/aroma. A couple of commercial examples are Bell's Two Hearted Ale (Centennial), Brooklyn Sorachi Ace (Sorachi Ace), Mikkeller Single Hop (various), and Anchor Humming Ale (Nelson Sauvin).

I need some suggestions, my parents are down in Weslaco, TX right now and my brother is down to visit them. They are wondering if there is anything I want back.

First thought was beer. What should I get? I've just started getting some of the smaller breweries in Canada, so I don't have much experience with different styles. So far I really like the IPA's I've tried, and the Noir de Chambly (I guess it's classed as a belgian dark ale).

I can't drink Guiness, tried a couple times and just can't do it. I'm trying to find out what is avaliable there.

In all honesty man, I can never really tell people what beer to get for me... When I shop for beers, I look for new ones to try based on information about them that I can compare to my own tastes.

Sorry that doesn't really help much, but it is hard to take a guess at what is available at a certain store in a certain area, and even harder to hope that the person has the diligence to find the specific beer(s) you have asked for.

Without them stopping in a bigger city (San Antonio, Dallas/Fort Worth, Houston, etc), you probably won't be able to get much.

However, there are a decent number of craft breweries that distribute to Texas. Dogfish Head, Flying Dog, Anderson Valley, and a bunch more that I can't think of.

I would suggest Dogfish Head's 60 Minute IPA and 90 Minute IPA.

Sublimely is good, Arrogant Bastard is good, Dead Guy is meh, and I have no idea on the Alamo beer.

I haven't cracked any, but the Alamo just sounds a lot like a tourist gimmick. It's listed as an american blonde ale.

Opened the Arrogant Bastard tonight. Wow, that is a strong one. I'm not sure how age affects it but the enjoy date was garbled but the year was 2010.

I did see them, looked like a damn fine line up for a tasting! I haven't even been to anything that extensive, looked like a great time though.

Age won't affect it too much, it would be fine sitting for quite some time. But it doesn't need to be aged like some of their other offerings.

Dude, it was a blast. Worst part was the Short's Bloody Brew. Literally, a bloody Mary beer.

Some of the beers were really good, and some were meh. A good bit of them aren't available usually in Ohio, due to distribution or ABV.
