Soak the beans overnight, if possible. The next day, drain and put fresh water in the pot. (This helps reduce the, um, flatulence factor.)

The canned beans are pretty good once you wash all the slime off.
Turned out pretty damn awesome. It was a tasty dish.
Oh yah, the main course was preceeded by a salad with a home made mustard vinaigrette. All in all, damn good.

hickory, i need to get a real smoker, for now i use the weber and put all the coals in the center and place the meat stuffs around the edges. not the greatest for "smoking" but it does work and the meat is fuckin good

I got the cheap o brinkman smoker, last time I smoked I used a combo of hickory, oak, and apple chunks.

Yeah, I have 8 half inch holes in the fire pan and I am happy with it. I need to add some more holes to it. I have a few complaints about it, but overall it gets the job done with good results.

right on. i was planing on getting this and drilling a bunch of 1/4 inch holes in the pan and putting something in the bottom to catch the ash, should work well. then im gonna try that pork shoulder how to you have up there

the way i do it, it dont take very long. the hoss way is an all day thing, but its worth it
i dont have a real "smoker" so i try to keep the meat as far from the heat as i can

its perty tender. like i said, i try to keep the coals in the center and the meat as far away from the heat as possible and let it cook slow. i usaualy pull the grate off and add wood chips a couple times during the cooking-welding gloves and an extra set of hands work good for this-

Yeah I was, I am all about the quickness. I sometime throw 4-5 chicken breasts drenched in BBQ sauce and wrapped in foil in the over @ 225 for about three hours and it comes out really tender but it's too much sauce/sugar and you can't really cook it without it in the over or it gets dry.

Then again, it may have to do with my meat as well. The only meat I buy in a store is my chicken. I get my beef from teh family farm, and the pork from teh boss. The fish I catch myself too.

No I mean I put them in the oven low and slow but you need to put them in some type of liquid to keep them from drying out in the oven.. BBQ sauce and chops or chicken breasts slow cooked in the oven is FTW, but like i said you end up eating a shitload of sauce.

Oh, I gotcha. I misunderstood your post to say that if you cooked them anywhere OTHER than the oven they were dry. Yeah, oven cooking meat is FTL, in my opinion. Everything except for fish. The wife has some awesome recipes for glazed salmon, among other things, that are bitchin' cooked in the oven.

I remember seeing something on the food network where they tested the liquid smoke against actual smoked ribs and the people couldn't tell which was the liquid smoke. And a lot of restuarants use it.
You can also make your own liquid smoke :fyi:
I couldnt live without my grills... I have a weber that I use for every day cooking.
Here is one of my current favorite recipes:
1/3 cup olive oil
1/3 cup tequilla
6 limes, juiced
2 tbls old bay
1 tbls salt
1 teaspoon pepper
Mix it all together, and marinate chicken breast in it. This recipe was originally made for shrimp, but it works great with chicken as well. BEWARE though, if you use it for shrimp, marinate for no longer than 30 minutes. The acid in the tequilla and lime juice will cook the shrimp if you arent careful. It will also start to cook the outside of the chicken, but I dont worry about that.
When I prep the grill I put the coals over on one side of the grill to concentrate the heat. I put the chicken on the hot side of the grill (make sure it is VERY hot) to get a good sear on both sides. After it gets a good sear, I move it over to the colder side of the grill to finish cooking. After everytime I flip it I also brush the marinade on the meat.
Comes out tender, juicy, and effing amazing.

I haven't tried it myself so I can't say for sure but it was on an episode of Food Detectives and the people that were tasting it couldn't tell which was the real thing.

Well I know the liquid doesn't taste the same as when my dad slow smokes his meats.
