I have these High Pass Filters, low pass filters, etc. How do those work? When you set the freq, does it filter out everything above or below that freq? Or just that freq itself? I'm fucking clueless.

LPF - cuts out the high frequencies.

And it filters out every frequency starting with the listed one. Also depends on the DB slope. Which will only cutout the given frequency range on a decibel slope.
