Rub with olive oil, sea salt and pepper (get McCormick hot shot if you can, combination of black and red pepper). Pan sear over HIGH heat, quickly to get the outside a nice texture, finish them in the oven to your desired done-ness.

Simple is often times better ;) . Taste the meat, dont cover it up with ingredients.

The salt enhances the flavor, and the pepper adds more depth to it. The olive oil helps promote coloring. Just dont over cook it, it probably wont take long with the searing and oven-ing.

I wrap mine with thick bacon strips with toothpicks and sear them like hoss said.

I wouldnt do the bacon, but that is me. Some foods taste good wrapped in bacon, I wouldnt do it to a steak, with the exception of maybe a tenderloin fillet (mignon) with bacon wrapped around the outside.

On leftover steak I use a mixture of ketchup and worchestershire sauce. On just cooked steak, I use nothing. If I put anything on a steak, it is more pepper and my wine salt.

He's already been cut up, brosef. I no can has those parts anymore. He has been converted to bacon, hams, roasts, steaks, chops, etc.

This is win. However, I just hit my freezer. :fyi:

I know, I know, not as good as fresh. But you can't beat homegrown, grain fed meat even if it is frozen.

True true. I dont know if I want a cow or a pig... A cow has A LOT of opportunities, but a pig is delicious... I have a freezer full of smoked pig right now though.

I smoke em. I have shredded smoked pork shoulder and shredded smoked chicken in the freezer ATM. And my bacon will be smoked when i make it too.

I think my next purchase will be a smoker. I have a weber and use wood chips when I BBQ, but it's just not the same.
